Moth's New Cheese Review

I've tried a handful of new cheeses recently, so here are my thoughts...

Castello Gouda

I'm picky about my firm cheeses, but this one is spectacular. It still manages to be creamy despite it's density. I highly recommend this one as a more broadly palatable cheese.

Briette Red Brie

This cheese tastes like goats. Not like goat cheese, but rather, like the way that goats smell. Eating this cheese made me feel like I was standing in my grandparents yard looking out at their goat pen. Is it odd that I still like it?

LaClare Family Creamery Fig & Honey Goat Cheese

I love any sweet goat cheese, and this is no exception. This is the candy of the cheese world. It pairs excellently with raspberries.

Fromager d'Affinois Le Fromager

Soft aged cheeses are an acquired taste, but I've learned to love them. This is one of the softest, creamiest cheeses I've ever tried, with a pretty mild flavor. The rind is also quite tame, though I'm not typically very fond of eating rinds. I think this would make for a great intoduction to soft aged cheeses.

Marin French Petit Camembert

The texture of this one is decadent. It's incredibly smooth and soft. However, the flavor is pretty strong. It needs to be paired with fresh fruit, as something sweet or tangy helps to calm the flavor. The rind has the expected mild pseudo-spice you typically get from a moldy rind, but I'm not very fond of the texture.

Wooly Wooly Black Truffle Sheep Cheese

The flavor of this cheese is intense. It's quite salty, and more dense than a goat cheese. It needs a good, thick cracker to help tone down the intensity. Despite this, the black truffle taste is delicious.

If you've ever wanted a cracker that tastes exactly like tomato soup, try this.

Whole Foods Lake Whitefish Caviar

While this isn't a "real" caviar, it's still delicious. It is incredibly salty, so I've been pairing it with a whipped cream cheese spread to level the flavor.
